Quick and easy Thai green curry.  Thai curry is one of the easiest and quickist meals you can put together any night of the week.  It takes about twenty minutes to cook and serve, and it delicious.  Thai food is one of my favourite culinary foods, it can be quick and simple or very complicated, but this dish will have you enjoying authantic Thai food,  without the price tag of take-away food.  I have to admit,  I’m a big fan of  Maesri curry pastes  and I am sure you will be to. If you love authentic Thai food as much as I do, these pastes will definitely come in handy. The pastes contain only natural ingredients, with no added preservatives, additives or flavours, so it’s a win, win

Depending on how hot and spicy you like your curries, will determine how much paste you put in your dish. I tend to put in half the tin of the green curry paste and still find it creates a bite. If you are making curry for the first time, or for children, I would start with a teaspoon and slowly build up. Children can take a while to build up the required taste of Thai food.

The directions on the tin usually say to just add meat, but I tend to tweak mine by adding half the amount of meat/protein as suggested and adding heaps of vegetables. Don’t feel restricted you can also add a extra tin of coconut milk to the dish, so it’s not as spicy and create leftovers for lunch the next day.  Another win is by adding vegetables to the curry, it will create less time in the kitchen as there will be no need to create another vegetable dish.

I always serve my curries with rice.  If you are unsure about how to cook rice, this is a sure fire way to nail it first time, every time.  So whatever the amount of rice you need, just double the amount of water. ie: 1 cup of rice to 2 cups of water.  If you would like to add some extra flavour to your rice, add some chicken stock instead of using plain water.  Now place a medium saucepan over the stove and turn on heat to medium, add some olive oil in pan about 2 tablespoons and wait till it heats up. Add the rice and stir to make sure the rice is throughly coated in olive oil.  Add the water or stock and bring to boil.  Once it reaches boiling point, immediately turn down heat and simmer for 20 minutes, with lid on. Once cooked take off heat immediately the rice should be nice and fluffy.

All you have to do is serve and enjoy.
